Observer Food Monthly Summer Special
OFM
 From the editor
The August edition of Observer Food Monthly is packed with choice titbits, from exclusive recipes from Angela Hartnett and Neil Borthwick's smart new London restaurant to tasting prehistoric fish from the Amazon region with Alex Atala, the next global superstar chef.

Robert McCrum reports on the British fascination with pigs and Jay Rayner meets volunteers and clients with food banks from opposite ends of the country and investigates why 500,000 people visited them in the past year. Plus, Anissa Helou's Egyptian recipes, a Scandinavian Taste Test and Rachel Cooke's life in restaurants.

OFM, the August issue, out Sunday.

Eat
There is a certain skill to growing your own peas and beans. Not so much in producing enough but in managing the inevitable glut. We mostly eat our peas straight from the pod, but our beans we eat simply steamed or in a favourite French salad with mustard and anchovies.
Drink
Nigel Slater says he loves a negroni, while Jay Rayner hates it (see Sunday's column). I am firmly in the Nigel camp. My preferred mix of the moment: Antica Formula vermouth, Sacred Spirits' gin and this same north London distillery's' gently bitter Rosehip Cup (it is also good with prosecco). Cheers!
Dine
It is August, the week of the Glorious 12th, when my thoughts stray from summer salads to grouse and other autumn game. So I will be making my annual pilgrimage to Knightsbridge restaurant Racine, where head chef Matthew Harris has mastered the art of simple cooking, may see you there?
Buy
I have to declare an interest here, in that I edited Simon's weekly cookery column in the Independent Magazine before joining the Observer, but anyone interested in good food will be keenly awaiting the release in a couple of weeks of his new book, Simon Hopkinson Cooks. My order's already in.
Word of Mouth Blog
How to make the perfect panzanella
Panzanella, the Italian bread and tomato salad, is a great way to use up a stale loaf. How do you stop it being bland or soggy – or do you have a better recipe for bread past its best?

Your favourite Nigel Slater dish
September marks Nigel Slater's 20th year as the Observer's food writer. As part of our celebrations, we want to know your favourite Nigel recipes from the Observer.  Whether it's a simple supper or something for a special occasion, tell us the Nigel Slater dish you can't live without, and why.

Send your favourite Nigel Slater recipe (name, ingredients and instructions for making it) from the Observer – and tell us why you chose it – to nigel.slater.best.recipes@observer.co.uk along with your name and email address, or click here and follow the on screen instructions.

One recipe per person please. Closing date and time is 23.59 on 19 August 2013.  A selection of your favourite recipes and your responses (as chosen by the OFM team) will be published in a later Observer Food Monthly.  By submitting a recipe you agree we may publish your response in OFM (in print and online) and your name to identify you as the author of your response.  You also agree that we may modify your response before publication (including editing and cropping) as necessary, but we will try to maintain the integrity of your response as originally received by us.
